Spiced Carrot and Walnut Cake with Cotswold Lavender Poached Pears

The ultimate carrot & walnut cake topped with sliced pears poached in red wine, beetroot, spices and peppercorns. Finished with a floral lavender caramel that trickles into the sponge adding sweet notes into every bite.

 

Serve while still warm with your favourite vegan Madagascan Vanilla Ice-cream. Have the leftovers at room temperature with a nice cup of tea!

For best results, microwave straight from the freezer:

Microwave (850W):

Single 160g: Remove compostable vacuum pouch and place on a microwave safe plate. Heat for 1 min 10 seconds. Leave to stand for 60 seconds, then serve.

Double 320g: Remove compostable vacuum pouch and place on a microwave safe plate. Heat for 1 min 55 seconds. Leave to stand for 60 seconds, then serve.

CAUTION: very hot when first removed from microwave
