Tamarind Jackfruit Curry

This curry has layer upon layer of flavour. Tender pieces of jackfruit, potatoes, carrots, peas, mixed peppers all cooked in a tangy fresh tamarind, ginger, and coconut masala paste with curry leaves, cinnamon bark, fresh lime. Garnished with coriander, desiccated coconut and fresh chilli. Serve with a grain of your choice, or a piece of toasted sourdough.

For best results, microwave straight from the freezer:
Microwave (850W):
Single portion (400g) - Remove the compostable pouch and place your meal in the Small Glass Dish provided. Heat for 4.5 minutes on full power with the lid off. Gently break apart the centre with a fork, cover with the glass lid and heat for a further 4.5 minutes. Leave to stand for 60 seconds, then serve.
Double portion (800g) - Remove the compostable pouch and place your meal in the Medium Glass Dish provided. Heat for 7.5 minutes on full power with the lid off. Gently break apart the centre with a fork, cover with the glass lid, and heat for a further 7.5 minutes. Leave to stand for 90 seconds, then serve.
Oven (fan):
Pre-heat the oven to 180 degrees.
Single portion (400g) -Remove the compostable pouch and place your meal in the Small Glass Dish provided. Heat uncovered for 15 minutes, then cover and cook for a further 30 minutes. Check your meal is piping hot, then serve.
Double portion (800g) - Remove the compostable pouch and place your meal in the Medium Glass Dish provided. Heat uncovered for 20 minutes, then cover and cook for a further 40-45 minutes. Check your meal is piping hot, then serve.
