A fragrant & comforting Thai coconut curry made with fava beans, sweet potato and tender savoy cabbage, infused with kaffir lime leaves, fresh chilli and ginger. Topped with coriander, crispy tamari marinated tofu and desiccated coconut. Simply serve with rice and a slice of lime for a more substantial meal, or keep it light and enjoy on it's own.
Please note we may swap in seasonal vegetables to ensure the freshest & most flavoursome ingredients.

Serve with some chopped cucumber, spring onions, bean sprouts, mint leaves and basil all mixed together with some lime juice and fresh red chilli.
For best results, microwave straight from the freezer:
Microwave (850W):
Single portion (400g) - Remove the compostable pouch and place the meal in the Small Glass Dish, or any microwave proof container. Heat on full power for 4.5 minutes with the lid off, then gently break apart the centre with a fork. Cook for a further 4.5 minutes with the lid on. Remove from the microwave and stand for 1 minute before serving.
Double portion (800g) - Remove the compostable pouch and place the meal in the Medium Glass Dish, or any microwave proof container. Heat on full power for 7.5 minutes with the lid off, then gently break apart the centre with a fork. Cook for a further 7.5 minutes with the lid on. Remove from the microwave and stand for 1.5 minutes before serving.
Timings may differ. Always ensure food is piping hot before serving.
Oven (Fan):
Pre-heat the oven to 180°C
Single portion (400g) - Remove the compostable pouch and place your meal in the Small Glass Dish provided. Heat uncovered for 15 minutes, then cover and cook for a further 30 minutes. Check your meal is piping hot, then serve.
Double portion (800g) - Remove the compostable pouch and place your meal in the Medium Glass Dish provided. Heat uncovered for 20 minutes, then cover and cook for a further 40-45 minutes. Check your meal is piping hot, then serve.
