A take on the classic Italian dish, this vegan lasagne is made of layers of aubergine and wholewheat lasagne sheets. Each of the layers are packed full of flavour with a vibrant tomato and beetroot sauce, creamy cashew cheese, almond ricotta and a zesty fennel pesto. A comfort food classic to serve with your favourite red wine. We recommend a Chianti.

Top with more fresh basil and oregano. Serve with a lettuce, rocket and watercress salad.

    For best results, microwave straight from the freezer:

    Microwave (850W):

    Single portion (400g) - Remove the compostable pouch and place your meal in the Small Glass Dish provided. Heat for 4.5 minutes on full power with the lid off. Gently break apart the centre with a fork, cover with the glass lid and heat for a further 4.5 minutes. Leave to stand for 60 seconds, then serve.

    Double portion (800g) - Remove the compostable pouch and place your meal in the Medium Glass Dish provided. Heat for 7.5 minutes on full power with the lid off. Gently break apart the centre with a fork, cover with the glass lid, and heat for a further 7.5 minutes. Leave to stand for 90 seconds, then serve.

    Oven (fan):

    Pre-heat the oven to 180 degrees.

    Single portion (400g) -Remove the compostable pouch and place your meal in the Small Glass Dish provided. Heat uncovered for 15 minutes, then cover and cook for a further 30 minutes. Check your meal is piping hot, then serve.

    Double portion (800g) - Remove the compostable pouch and place your meal in the Medium Glass Dish provided. Heat uncovered for 20 minutes, then cover and cook for a further 40-45 minutes. Check your meal is piping hot, then serve.
