Beetroot, Ginger & Rhubarb Soup

A smooth and comforting soup made with refreshingly sour rhubarb, spicy ginger and juicy sweet beetroot blended together and topped with pickled discs of golden and candy beetroot. Serve with crusty bread & a nob of vegan butter.

Sprinkle some fresh parsley, dill and chives on top and mix in a light swirl of olive oil.
For best results, microwave straight from the freezer:
Microwave (850W): Remove compostable vacuum pouch and place in the correct sized Glass Dish, as instructed on the label. Heat for 3 mins with lid off (4.5 minutes for a double portion). Gently break apart the centre with a fork. Cook for further 3 mins with lid on (4.5 minutes for a double portion). Stand for 1 min, then serve.
Hob:
Allow to defrost in a suitable saucepan. Warm on a gentle heat stirring regularly until piping hot. Do not allow to boil.
