A rich chocolatey molé sauce made up of sweet and spicy ancho chillies, Montezuma dark chocolate, flaked almonds, fresh tomatoes, oregano, toasted cumin and fennels seeds, cloves, smoked paprika, walnuts and pumpkin seeds. Accompanied by crispy balsamic and maple marinated tofu, roasted leeks, cauliflower, spiced sweet potato, sweetcorn, black eyed and edamame beans, topped with sesame seeds and coriander. A delicious twist on a traditional Mexican favourite-perfect for lunch or serve with a grain of your choice for dinner.

Try adding some quinoa mixed with diced red onions, cherry tomatoes, avocado, lime, ground cumin, fresh coriander and jalapeños.

Microwave (850W):

Single portion (400g) - Remove the compostable pouch and place your meal in the Small Glass Dish provided. Heat for 4.5 minutes on full power with the lid off. Gently break apart the centre with a fork, cover with the glass lid and heat for a further 4.5 minutes. Leave to stand for 60 seconds, then serve.

Double portion (800g) - Remove the compostable pouch and place your meal in the Medium Glass Dish provided. Heat for 7.5 minutes on full power with the lid off. Gently break apart the centre with a fork, cover with the glass lid, and heat for a further 7.5 minutes. Leave to stand for 90 seconds, then serve.

Oven (fan):

Pre-heat the oven to 180 degrees.

Single portion (400g) -Remove the compostable pouch and place your meal in the Small Glass Dish provided. Heat uncovered for 15 minutes, then cover and cook for a further 30 minutes. Check your meal is piping hot, then serve.

Double portion (800g) - Remove the compostable pouch and place your meal in the Medium Glass Dish provided. Heat uncovered for 20 minutes, then cover and cook for a further 40-45 minutes. Check your meal is piping hot, then serve.
